Purchase beets from your local farm stand when they are in season. New York is the second-leading U.S. producer of red table beets.

How to create a meal using beets:

P  For the protein, start with 3-4 ounces of cooked chicken, beef, or fish.

C  For the carbohydrate source, have two boiled beets along with your choice of vegetable, such as asparagus, broccoli, Brussels sprouts, cauliflower, green beans, mushrooms, yellow squash or zucchini.

F For the fat source, use extra-virgin olive oil in the cooking process when making the protein source.
