¼ cup of cooked pearl barley has 10 grams of carbohydrates. Barley, one of the oldest cultivated cereals, has one of the lowest glycemic indexes on record and therefore barley is great for fat loss. As a cereal grain, barley is not recommended for people who follow a grain-free diet. Although barley has gluten it does not have wheat.
