Coconut Oil

Coconut oil is the best high-heat stir-fry oil because it's stable at high temperatures, has many health benefits, and adds great flavor.  Coconut oil is the best fat to overeat without consequence. Coconut oil contains mostly (65%) medium chain fats. Medium chain fats are caprylic acid, capric acid, and lauric acid. These short and medium chain saturated fatty acids are not deposited to any extent in fat cells and they are usually not found on chylomicrons which package fat and carry fat to the different cells of the body. Instead, short and medium chain fats are primarily used as energy and are not stored like longer chain fats. Coconut oil is high in the anti-microbial fats lauric acid and capric acid which the body uses to kill or diable pathogenic viruses, bacteria, and protozoa. Lauric acid gives human milk its major anti-microbial properties.  Coconut oil decreases pro-inflammatory immune components (cytokines). Research suggests coconut oil might be useful as therapies in acute and chronic inflammatory disorders.
